Carrot & Apricot Smoothie

Ingredients:
- 20 dried apricot halves
- 1 mango, diced
- 2 cups carrot juice
- 1 tablespoon honey
- 1 teaspoon grated ginger
- ¼ cup roasted, unsalted cashews
- 1 cup low fat natural yoghurt
Place apricot halves in enough boiling water to just cover and soak for 15 minutes. Pour apricots and soaking liquid into a blender or food processor and puree until smooth. Add remaining ingredients and puree until thin enough to drink through a thick straw.
