Cauliflower & Cabbage Curry

Ingredients:
- Oil spray
- ½ medium onion, chopped
- 1 cup salt reduced chicken stock
- 2 cups cauliflower, chopped into florets
- ½ cabbage, shredded
- 1 zucchini, diced
- 1 stick celery, diced
- 1 tablespoon curry powder (to taste)
Heat a frying pan that has been sprayed with oil. Add onions and cook until soft. Add stock and bring to the boil. Add cauliflower, zucchini, celery and curry powder, cover and cook for 5 minutes. Stir in cabbage, cover and cook for 5 minutes. Stir regularly. Simmer until sauce thickens.
