
Vegetable Kebabs
Serves 4
Ingredients:
- 1 tablespoon olive oil
- 1 clove garlic, crushed
- ¼ cup balsamic vinegar
- 1 zucchini, cut into 2cm chunks
- 2 yellow squash, cut into 2cm chunks
- 1 cup mushrooms, brushed clean and cut into 2cm chunks
- 1 red capsicum, cut into 3cm chunks
- 1 green capsicum, cut into 3cm chunks
- 1 red onion, cut into thin wedges
- 1 cup cherry tomatoes
Place all ingredients in a small plastic bag and seal. Shake and rub ingredients together until well combined. Thread vegetables onto 8 skewers and reserve marinade. Place on grill over medium‐hot heat. Baste occasionally with marinade. Grill 20 minutes or until tender
Tips:
- Use metal skewers or soak wooden skewers in water prior to use to prevent burning.
- This recipe is useful if you are hosting or attending a barbeque whilst on the meal replacement program, enabling you to also enjoy the barbeque.
